I had the most insatiable hankering for chocolate croissants while we were in Austin. No there is no NEWS, we are not expanding our family. Just expanding my waistline!!! 🙂

My unsurpassed search for chocolate croissants led us to the best bakery in Austin– Easy Tiger. The fare did not disappoint. I’ll wax on about this local staple in my Austin City Guide. For now, suffice it to say that I had not one, but two croissants from Easy Tiger and could have gone for a third had I not had to show up in a swimsuit latter that day.

This outfit jives perfectly with yesterday’s inspiration board. Plus, this little dress transitioned seamlessly from day to night, and kept me comfortable and cool all. day. long. Tuesday is gaining speed, and I hope you can rock and roll with it!

God Bless Texas Americana

Ya’ll know how much I love a good mix of the red, white, and blue. Americana forever!! I promise that I will recap more of our trip to Austin at the end of the week, but I wanted to start this week off with a little style inspo straight from that great state– Texas!!

These pieces are all easy summer dressing options, and can easily be amended for any inclement summer weather that gets thrown your way. I wore my jean jacket all weekend, as you’ll see in  upcoming posts. When you go from 85 degree and 100% outside humidity to 65 degrees and pure Air Conditioning inside, your need to carry layers becomes very real!

Picnic Perfect

This bright plaid shirt and retro skirt vibe has me all sorts of happy. Plus, the weather had been glorious over the last few days so bonus! Here’s the great thing about sturdy separates. You can wear them season after season in a variety of ways.

I’m already planning on wearing this skirt come fall with tall suede boots. I’ll wear this shirt layered under a cozy sweater when it’s winter. Choose pieces that you love, regardless of their seasonal designation and they will easily transition into any season you like!

Spicy Szechuan Green Beans with Ground Turkey

Our family really enjoyed this dish. Let me rephrase that. My husband and I really enjoyed this dish. To be honest, green beans are not a favorite food of either of my boys. But we asked that they eat four beans each and their turkey with the promise of mangoes afterwards!

I really enjoyed how light and fresh this meal tasted. I ate mine sans rice, we’re trying to be more carb conscious around here. But I still make grains and starches for my kiddos to enjoy. As always, it was a quick, easy, delicious dinner on what have been increasingly busy nights for us.

Ingredients

3 Tbsp. reduced-sodium soy sauce or tamari (use wheat/gluten-free if needed)
1 Tbsp. rice wine, mirin or dry sherry
1 tsp. brown sugar
1 tsp. cornstarch
1/4 – 1/2 tsp. crushed red pepper flakes, to taste (optional)
1 Tbsp. vegetable or coconut oil
1 lb. green beans, ends trimmed and cut in half, or use frozen
1 lb. ground turkey, pork or meatless crumble
2 tsp. minced garlic, (3 – 4 cloves)
1 Tbsp. fresh ginger, peeled and minced
1/4 cup scallions or chives, thinly sliced

Directions

(Start the rice first, if you are serving it.) In a small bowl or measuring cup, whisk together the soy sauce, rice wine, brown sugar, cornstarch and red pepper flakes (optional). Set it aside.

Heat a large nonstick skillet over high heat and add the oil. When it is smoking, add the beans (if using frozen beans, defrost them first) and cook, stirring frequently, until they are shriveled and black in spots, 5 – 8 minutes. (Meanwhile, slice the mango, if you are serving it.) Reduce the heat if necessary to keep them from burning. Transfer the beans to a plate.

Reduce the heat to medium and add the turkey, pork or meatless crumble. Cook until no pink remains, about 5 minutes, then add the garlic and ginger, stirring until fragrant, about 1 minute. Return the beans to the pan, stir the sauce again, and add it to the pan. Cook until heated through and the sauce is thickened, about 1 minute. Stir in the scallions or chives and serve it immediately, or refrigerate it for up to 3 days, or freeze it for up to 3 months.

Happy Tuesday, friends! This past week-and-a-half has been go, go, go. I mentioned on Instagram that I have taken the opinion that May really is as busy as December without the fudge and presents.

Yesterday we got to go to Hogle Zoo with my son’s school class. Today he is presenting a book report about Harry Potter. This weekend is our first wedding to kick off the season, and we are traveling to Austin to celebrate this beautiful couple. If you have any Austin, TX recommendations, I’d love to hear!!

It will be my first time in Texas and I am excited to get a taste of Austin. Literally, I think our plan is to eat our way through the city. What has May held for you? I hope that all of you had a wonderful Mother’s Day, whether celebrating your mother or being celebrated.
