Today we’ve got some baking goodness going on over here. Coconut Granola, friends! It is just. so. good!
I got this recipe from a friend, and it has become our go-to for breakfast (now don’t mistake, we still buy plenty of bagged and boxed cereal when I can’t get around to making this up). It is definitely my husband’s favorite. Just add berries, a touch of milk, and mmmmmm! Savor away! So here’s what you’ll need:
- Oats (6 cups or more)
- Brown sugar
- Raw coconut
- Sunflower seeds (raw as well)
- Raisins or dried cranberries (optional)
- Nuts (almonds, pecans, cashews, you pick your favorite 1 C.)
- Sesame seeds
- Wheat germ
- Salt
- Oil
- Honey
- Vanilla
I wanted to take a picture of the recipe because it’s written on an actual 3×5 card. How novel! Even down to the vanilla stain on the bottom. My Grandmother wrote most of her recipes on cards like these, though most of the time I’m working on a recipe on my phone. (Unless you can read the card, scroll to the end to see full recipe at the bottom of this post.)
First, combine all dry ingredients: oats, brown sugar, coconut, sunflower seeds, nuts, sesame seeds, wheat germ, and salt.
I doubled it up this time, because we can seriously eat through one batch of this in three days flat!
Stir, stir, stir. How cute is my helper! 🙂 Combine wet ingredients: oil, honey, and vanilla. Then stir some more to combine with the dry ingredients.
Preheat oven to 350. Pour your granola onto a baking sheet.
Bake for 30 minutes. If you have time, check on the granola half-way and stir (this will keep it from sticking to the edges. If you don’t have time, don’t worry about it!)
